Thanksgiving Catering Overview

Start with a whole, unbrined turkey that includes our house-made Dry Brine, featuring regeneratively grown Criolla Sella peppers from Carnation Farms. Then add our seasonal, chef-prepared sides package if you’d like us to handle the sides, too.

Turkey and sides package are purchased separately.

Because the turkeys are still growing, exact weights won’t be known until harvest. We’ve requested birds in the approximately 8.5–12 lb. range, but final weights may vary. A $50 deposit reserves your turkey and goes toward the final purchase price.

Orders close November 15, or earlier if quantities sell out.

Your Thanksgiving order can be picked up on Tuesday, November 24 or Wednesday, November 25 from 1–6 PM. Pickup-day selection is required during checkout so your order can be prepared for the correct date. All pick-ups take place at the Carnation Farms Farmstand.

Each unbrined turkey reservation includes a jar of our house-made Dry Brine, featuring regeneratively grown Criolla Sella peppers.

Let the Carnation Farms kitchen handle the sides with a complete seasonal package.

  • Scalloped Potatoes with caramelized onions, fennel & thyme — 2 lbs.
  • Stuffed Delicata Squash with wild rice, local mushrooms & house-made sourdough — 2 lbs.
  • Radicchio Salad with roasted carrots & Brussels sprouts, pomegranate vinaigrette — Large clamshell
  • Gravy of your choice, turkey OR mushroom — 1 qt.
  • Cranberry Compote with concord grape — 1 pt.
  • Brioche Rolls — 4 total
  • Compound Butter with fresh herbs — 1/2 lb

Grab extras at pickup!

You don’t have to plan every last bite in advance. When you arrive for Thanksgiving pickup, the Farmstand will have additional à la carte sides and seasonal favorites available while supplies last.

Already have a turkey? Jars of our house-made Dry Brine featuring regeneratively grown Criolla Sella peppers will also be available for $15 each, along with additional holiday foods and Farmstand favorites.

How To Order

Reserve Your Turkey

Place a $50 deposit to reserve your whole Thanksgiving turkey. Your turkey reservation includes Dry Brine.

Add Your Sides

Want us to handle the sides? Add the $275 Thanksgiving Sides Package, which serves four, to your order.

Choose Your Pickup Day

Select Tuesday, November 24 or Wednesday, November 25 during checkout so the Carnation Farms team can prepare your order for the correct pickup date.

Order Deadline

All Thanksgiving catering orders must be placed by November 15th, or earlier if quantities sell out.

We’ll Confirm the Final Turkey Weight

Once your turkey’s actual weight is known, the remaining balance will be calculated at $18/pound.

Pick Up

Come by on your selected date - either November 24 or November 25 - between 1–6 PM to pick up your turkey and sides. Browse any additional Farmstand holiday offerings and head home ready for Thanksgiving!
